Squash the Beef Catering, LLC is a 100% vegan catering company designed to provide high-quality vegan comfort food that does not compromise taste or nutrition. The service offerings are quite a change to the existing vegan food industry where the food can be boring, distasteful, and bland. Squash the Beef Catering provides a solution by recreating your favorite comfort foods without the use of animal products.
We offer catering services for small groups/parties, corporate events, pop-up shops, and food festivals/fairs. Orders can be made by phone or online. We can deliver food as well as provide a pickup option. At this time, our catering service only provides food, we do not assist in serving, re-heating, or decorating events.
Why We Exist
There has been a 600% increase in people identifying as vegans in the U.S in the last three years. According to a report by research firm GlobalData, only 1% of U.S. consumers claimed to be vegan in 2014. And in 2017, that number rose to 6% and is still climbing. Despite the rapid growth in veganism, the food industry still lacks in providing substantial vegan food options in the form of corporate catering and 100% vegan food sources– especially in the Greater Cleveland area.
There was a time when vegans were almost ostracized and considered members of some far-strung cult—weird and radical. But not today. The number of individuals identifying as vegan is rapidly growing. Today, ‘meat-free’ and ‘ethical’ populations are becoming more than just a trend- there is a global dietary shift away from animal products. For companies serving any catering to their staff or party host catering to their guests, providing vegan dishes is now a must-have option!

Founded in 1967 as the West Baking Company, New Horizons Baking Company came under the leadership of Tilmon F. (Tim) Brown in 1995. One of the first changes he made as CEO was closing the general office in Maumee, OH and moving the corporate headquarters to the Norwalk facility. He also made the decision to reinvest in the business with the goal of improving both the quality of the products, and the quality of life for employees of New Horizons.
In 2008, Genesis Baking Company, a division of New Horizons, was formed with the intentions of expanding our business opportunities. With the addition of new high capacity machinery, the Norwalk bakery was upgraded to a state of the art facility in 2011.
As a result of increased innovations and growth, New Horizons and Genesis currently serve over 2,000 quick service restaurants across Ohio, Kentucky, Indiana, Michigan, and Western Pennsylvania as well as national retail and sandwich makers.

Tiwanna Scott-Williams is a Registered Nurse turned Chef and Owner of PearlFlower Catering. A Cleveland native, and graduate of Ursuline College Tiwanna has been committed to serving her workplace and community. After working as a full-time nurse for 10 years, inspired by her two grandmothers, Pearline Scott and Delores Flowers, she decided to start her own business, PearlFlower Catering.
Chef Wells specializes in preparing intimate dinners for two. He prepares romantic, 6-course meals in the comforts of couples’ home. He provides everything to make the romantic evening complete: from the freshest and most flavorful ingredients to designer China, a linen tablecloth and napkins, fresh flowers and candles. Chef Wells also uses his own restaurant quality cookware to ensure flawless food preparation. And, he totally cleans the kitchen after the event! So, his service is like having an upscale restaurant in your dining room.
